About the role:

Fraser Short is known for his incredible ability to transform venues we are looking for a passionate and innovate chef to join in on the creative process and truly transcend this French Brasserie concept to the next level. You'll also have the opportunity to be mentored by Group Executive Chef David Clarke and Company Founder Fraser Short.

The Head Chef role is responsible for:

  • Delivering exceptional food and ensuring a high standard of consistency and quality at all times
  • Designing and implementing new menu concepts that respond to the needs and tastes of target markets
  • Managing seasonal menu changes
  • Oversee the daily operation of the kitchen
  • Ensuring that food costs and wages are meeting budget.
  • Ensuring the Kitchen Minimum Standards (KMS) are being followed and adhered to by all employees
  • Conducting internal audits and remedying any issues of non-compliance or poor performance.
  • Enforcing stock management policies and procedures.
  • End to end recruitment for senior chefs.
  • Performance management, training and development, succession planning for kitchen team.

About you:

As a self-motivated, passionate and focused individual you will possess the following attributes:

  • Minimum 3 years' experience in a comparable venue as an Head Chef
  • Ability to work in a fast paced environment with multifaceted kitchen operations.
  • Previously researched, designed and implemented menus into a casual dining to fine dining establishment.
  • Previous experience in management of stock, wages and budgets.
  • A natural team player and experience in building high performance teams.
  • Passion for learning and love for beautiful ingredients and food innovation.
